This award-winning 330-gram jar of honey comes from hives off the beaten track in some lesser-known corners of South-East London where there exceptionally productive spaces for bees to thrive. Like all bees, the Custom House variety make characteristic hexagonal cells out of wax that tessellates for raising young and for storing pollen, nectar and honey.

Most hives separate the areas where honey is stored and young are raised. Bees evaporate water from nectar to make honey. Taste, colour and consistency depend on the species of plant that nectar have been collected. Various enzymes secreted by the bee also help give it its characteristic taste and appearance.

Bees make honey to preserve nectar for wet weather and the cold winter months. The colony will reduce in size significantly for the winter, but bees do not hibernate - they maintain a temperature of around 30oC. The Custom House bees collect pollen and nectar from re-wilded former industrial land as well as private and public gardens, long-established tree and bush lines and the margins of Hackney Marshes.
Marsh plants such as Water Mint are especially loved by the bees and lend bright herbaceous notes to this rich honey.
